Nigella Lawson lists this recipe in Feast as the Valentine’s Day meal for one. Since I am (again) solitary on V-Day, I made this.
It is very simple: onion, potato, olive oil, cayenne pepper, and an egg, if you want it. Sometimes I add the egg, sometimes I don’t.
Onion and Potato Hash
1 small onion
1 large potato (enough for 2 to 2 1/2 c. of potatoes, cubed)
Extra virgin olive oil
Slice the onion in half, then slice each half into thin half moons. Heat a tablespoon of oil in a frying pan, then add onions. Scrub but don’t peel the potato and cut it into 1/2″ dice. Add to pan, sprinkle on cayenne pepper to taste, and cook about 30 minutes, slowly, until carmelized and the potato is soft.
If adding egg, push the onion and potato mix to one side of the pan, and crack the egg in the empty side. Fry until done to your liking. Place the onion and potato mixture on a plate and top with egg.
